Honey roasted vegetables


We love this recipe with sweet potatoes (yams if you like!) but other varieties of potato work well too.



2 organic sweet potatoes (around 500gm), peeled, halved, and cut into 2cm pieces.

2 medium organic parsnips, peeled and cut into 2cm pieces.

4 medium organic carrots, cut into 2cm pieces.

a handful of walnut pieces or almonds

1/2 a cup of Superbee Tasmanian Leatherwood Honey

A little olive oil

Salt and pepper



Preheat oven to 180 degrees celsius.

In a 2-litre baking dish toss together sweet potatoes, carrots, parsnips, nuts, honey, and oil.

Add a little salt and pepper.

Top with herbs and roast until veggies are starting to brown and tender when pricked with a fork (about 1 hour).


A honey bee can fly for up to 10km, and as fast as 25 km/h. But they almost always come home.
