Some people throw out their old bananas but, if they still have some life in them, turning them into warm banana bread is a much better way to live. We’ve livened up an old recipe for banana bread with some of our Manuka Honey UMF 12+. This honey gives the bread a deep earthy note and a little extra sweetness. Because life is too short not to enjoy bananas and honey.
Ingredients
125g butter
1 cup brown sugar
1 teaspoon vanilla extract
2 free range eggs
2 cups mashed banana
1¾ cups plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of baking soda
1 teaspoon ground cinnamon
¼ cup Superbee Manuka Honey
Butter, extra, to serve
Method
Preheat oven to 160°C
Place the butter, sugar and vanilla in a mixer (you could mix yourself) and beat for 8–10 minutes or until pale and creamy.
Add the eggs slowly and beat well to combine.
Add the banana, flour, baking powder, bicarbonate of soda, cinnamon and honey and stir to combine.
Spoon the mixture into a 26cm x 11cm lightly greased tin lined with baking paper.
Bake for 1 hour or until cooked when tested with a fork.
Cool in the tin for 20 minutes before turning out onto a board or rack.
Slice and serve with the extra butter. Can feed a kitchen full.
